This is from the Bible, too, the Book of Proverbs 15:17: “Better is a dinner of herbs where love is, than a stalled ox and hatred therewith.“ Georgette Heyer fans will be familiar with the quotation, since it comes up in one of the Bath novels – I think it’s Black Sheep?
If you wish to make dandelion fritters, I would suggest you pick the leaves before the plants begin to flower, since their taste is milder. Make sure you've got the right plant, and that the dogs haven't been there! Dandelion leaves are smooth, not hairy. If you're too late, drench the leaves in warm water for about ten minutes to take away the bitterness.
Dandelion flowers make a fine sirup or jelly, while the flowerbuds can be sautéd in butter or pickled in vinegar to use like capers. Wild herbs are pretty strong, so use sparingly, and remember some people are allergic.
